I'm mostly familiar with them in a Chinese dish called (roughly translated, if the homophones aren't tripping me up), "oil rice", but it's not all that oily. It vaguely reminds me of what stuffing might be like. If you've had a Chinese dish made with sweet (i.e. sticky) rice and various other ingredients steamed in a bamboo wrapping, it's pretty similar. Yum. But I haven't had a version made with dried oysters in a long time :(
