First off, if you haven't read it yet, make sure to read Tim Power's great 
SF novel, Last Call, which is set in modern day Vegas.

Some favorite Vegas things...

Yes, the Star Trek stuff at the Hilton is pretty fun.
The pirate battle at Treasure Island.
The fountains at the Bellagio
The goofy animatronics show at the Forum Shops in Caesar's Palace
The overhead lightshow at the Fremont Street Experience [though it's pretty 
out of the way]
Just sightseeing at the silly architecture & decor of the big casinos

OK, my wife and I went to Vegas for the sheer tacky splendor of the strip, 
but as folks who get a kick out of goofy roadside attractions, we had a 
blast.  OTOH, given that, we also went to the Liberace museum which, having 
now been there, I'd never send anyone to... bleh.

Shows: Well there's always the two Cirque du Soleil shows, which are 
spectacular. But we enjoyed Jubilee at Bally's, which is a classic old 
fashioned Vegas showgirl show.

We didn't get to the Hoover Dam or Red Rocks, but really want to next time.
