I suspect the difference is simpler: Valabar and Sons is the 'official' 
name of the restaurant, which in everyday parlance gets shortened to 
just Valabar's, dropping the 'and Sons.' (Generally, anyway. I suspect 
Morrolan or Sethra would refer to it by its proper name.)
