Thinking about it, I think the sentence is a perfect example of where
it could go either way as either the singular adjective or plural
form, for pretty much any ethnicity or nationality.  Although some
ethnicities/nationalities would use the "-ish" suffix for the singular
form.

Language is just daft, sometimes.
