If you've never soaked the bird in such a solution, I heartily recommend it. It keeps it moist throughout the long cooking time and adds incredible flavor. We're also having mashed Yukon Gold potatoes, gravy, crouton dressing, green beans, sweet potatoes, cranberry sauce, and pumpkin cheesecake. Nothing very different except for dessert. I'll be quite thankful if we can eat all of it over the four days alloted to us. :)
