It's been indicated that she was alive for a very long time before she became undead (without checking, I'd guess around 200,000 years). However, Sethra has Dzur Mountain, which I've always suspected is what maintains her life. :) At a guess, I'd suspect she finally lost a fight in a way that she couldn't be revivified, and so the gods let her come back as an undead...it was either that or put one of her many apprentices in her place (which, apparently, was the lesser choice). However, it wouldn't surprise me that the other Great Weapons at least _extend_ lifespan, possibly by slowing, arresting, or even healing (up to a point) the effects of aging.
