Actually, they did. It's "Amorphia" in _Book of Jhereg_ (and I imagine in 
_Book of Taltos_ too).

Personally, I always thought that "Lesser Sea of Chaos" sounded better, and 
that it was clear from context that it wasn't just disorder in general, but 
Something specific.
