I wonder if Steve is also incorporating his (presumed) knowledge of 
Swedish egg coffee, in which the grounds are actually mixed with a small 
amount of beaten egg before brewing.  The resultant coffee is light, 
clear, and very smooth in flavor.

If you're "from around here" (Minnesota) you probably know about Swedish 
egg coffee.
