In real life, assasins tend to not be too concerned about such matters.    
Do they go for spinal cords?   Quiet killings tend to be with pillows or  
poison.   Killings that require hurrying tend to be "injure him badly and  
get the hell away".

Options change a bit if you want to make sure that the victim stays dead.
